Ingredients:

2 tablespoons SIMPLY GREEN TOMATOES (drained)*
1 cup Light Cream Cheese

Method:
Blend the above until smooth.

(Chop the SIMPLY GREEN TOMATOES finely if a blender is unavailable).

Use as a dip or place in a piping bag and place small amounts on crackers and garnish.

Use as a spread on sandwiches.

*The reserved extra virgin olive oil can be used for shallow pan frying chicken, fish,

steak or use as a salad dressing.


*This recipe is quick and easy and SO tasty.


  'SIMPLE' NIBBLE MUSHROOMS...

'SIMPLE' NIBBLE MUSHROOMS...

Ingredients:

10 medium sized field mushrooms
10 slices of SIMPLY GREEN TOMATOES
1 tablespoon of feta or tasty cheese
1 tablespoon of breadcrumbs

Method:
Remove stems from mushrooms and wipe outer with a damp cloth.

Place one slice of SIMPLY GREEN TOMATOES in the cavity of each mushroom.

Crumble a little cheese over tomato slice and sprinkle the tops with breadcrumbs

and place the mushrooms on a griller tray. Grill slowly until the mushrooms are a little tender

and the topping is lightly browned.

*A 'simple' pre-dinner nibble or serve as an entree.


  'SIMPLE' OVEN BAKED VEGETABLE...

'SIMPLE' OVEN BAKED VEGETABLE...

Ingredients:

6 meduim potatoes (alternatively use sweet potatoes)
4 tablespoons SIMPLY GREEN TOMATOES (drained).

Method:
Peel potatoes and thinly slice into rounds.

Drain and reserve* the oil from the SIMPLY GREEN TOMATOES.

Mix the potatoes and SIMPLY GREEN TOMATOES together,

place in baking dish and bake in moderate oven for 20-30 minutes.

Can add favourite toppings, (cheese, bacon etc) before cooking.

*The reserved extra virgin olive oil can be used for shallow pan frying chicken, fish,

steak or use as salad dressing.


*A tasty, low cholesterol vegetable dish (without the toppings)!


  'SIMPLE' SURPRISE PUMPKIN...

'SIMPLE' SURPRISE PUMPKIN...

Ingredients:

1 small whole pumpkin
2 tablespoons SIMPLY GREEN TOMATOES
1 medium brown onion (finely sliced)
3 rashes of bacon (diced small)
3 cups seasoned breadcrumbs
2 cups grated tasty cheese
1 cup cream
2 tablespoons pine nuts (browned in oven)

Method:
Wash pumpkin, cut a small circle in the top of the pumpkin for the lid.

Scoop out the seeds and stringy flesh, (discard). Place the pumpkin aside for filling.
Combine the SIMPLY GREEN TOMATOES, onion and bacon.

Stir together over low heat for 3 minutes.

Add remaining ingredients, mix well.
Fill cavity of the pumpkin with the above stuffing mix.

Replace lid and bake in slow to moderate oven for approximately 2 hours
or until soft to touch. Keep the lid on until ready to serve.

Remove lid and scoop a little flesh and stuffing together.

Fantastic Crowd Pleaser.

'SIMPLE' DELICATE ICE-CREAM...

Ingredients:

2 litres raspberry or strawberry ice-cream
4 tablespoons of SIMPLY GREEN TOMATOES (drained).

Method:
Finely chop the SIMPLY GREEN TOMATOES and mix through the softened ice-cream.

Place back into freezer and re chill.
Serve with your favourite dessert or in an ice-cream cone.

steak or use as salad dressing.


*A tasty, low cholesterol vegetable dish (without the toppings)!


  'SIMPLE' SQUASHED POTATOES...

'SIMPLE' SQUASHED POTATOES...

Ingredients:

6 Medium Potatoes
1 Tablespoon SIMPLY GREEN TOMATOES

Method:
Wash unpeeled potatoes and cook until soft. (Either boil in water or cook in the microwave).

When soft put potatoes between paper toweling and squash to flatten the potatoes slightly.

Place the potatoes on an oven tray* and cover the potatoes with the

SIMPLY GREEN TOMATOES and oil. Bake in a moderate oven until nicely browned.

(Optional – add a little rock salt, or flavoured salt before cooking).


*Browns quickly in an electric grill with a lid, approximately 5-10 minutes.

A very quick, easy and delicious way to serve potatoes. Something different!


  'SIMPLY GREEN BITES'...

'SIMPLY GREEN BITES'...

Ingredients:

100g/3.5oz SIMPLY GREEN TOMATOES (drained)*
12 slices of white bread
18 slices of shaved salami

Method:
Prepare the recipe_Simple Dip or Spread
Cut the bread slices to the size of salami rounds.  Assemble layers:
Spread one side of bread with dip, place dip side down onto salami slice.  Spread bread and top with salami. 
Cut rounds into six wedges, finish off with a slice of Simply Green Tomatoes, secured with a toothpick.
(layers:  salami, dip, bread, dip, salami, dip, bread, dip salami & topping of Simply Green Tomatoes with tooth pick to secure)

Makes 36 tasty ‘Simply Green Bites’

'SIMPLE' QUICHE...

Ingredients:

3 eggs
2 Tablespoons SIMPLY GREEN TOMATOES (with oil) or spread
1 cup milk
1 cup grated tasty cheese
¼ cup plain flour
¼ cup spring onions
1 teaspoon powdered chicken stock

Method:
Whisk together the eggs, milk, flour and stock. Fold through the SIMPLY GREEN TOMATOES (chopped), cheese and onions (chopped).
Pour into greased quiche dish and bake in a moderate oven (180 C or 360 F) for 20-25 minutes, until firm to touch.
Tasty for entrée or main serve.
• Quick, and very easy to prepare!!

Ingredients:

2 1/2 CUPS SR FLOUR
1 TBLS BUTTER
1 CUP MILK
1 CUP GRATED CHEESE
1 CUP LIGHTLY CHOPPED Simply Green Tomatoes
1 TBLS OIL

RUB IN BUTTER, MIX IN CHEESE AND TOMATOES. COMBINE WITH MILK (MIXTURE TO BE FAIRLY MOIST)

DROP ROUNDED DESSERT SPOONFULLS ONTO BAKING PAPER IN GEORGE. DO 9 AT A TIME – COVER WITH BAKING PAPER CLOSE GEORGE AND COOK APPROX 6 MINS.

MAKES APPROX 3 DOZEN.

Please note that George is the George Foreman Grill but you could just cook them in the oven. Also they are nice topped with a swirl of Simply Dip.

Ingredients:

2 cups pork sausage mince
2 tablespoons Simply Green Tomatoes
1 cup thinly sliced celery
1 cup chopped walnuts
1/2 cup finely sliced onions
2 green apples cored and grated
2 cups breadcrumbs
Zest of 1 lemon

Method:
Shallow pan fry the above ingredients gently over a low heat for 10 minutes
Mix together the ingredients, fill the cavity of your chicken or turkey.

* This adds a tantalizing flavor to your poultry. *

Ingredients:

2 Tablespoons Simply Green Tomatoes and a little of the oil
1 diced brown onion
1 small diced red capsicum
1 cup chopped tomatoes
Medium tin tuna (in chilli oil if available)
Approx 4 servings short penne pasta

Method:
Whilst boiling pasta, place Simply Green Tomatoes, onions and red capsicum into a heavy based saucepan and sauté gently until onion is lightly browned.
Add the tomatoes and the tuna . Simmer until pasta is ready.
Mix with the pasta and serve with fresh bread.

Ingredients:

1 Tablespoon Simply Green Tomatoes (drained)
1 Tablespoon Black Stuffed Olives (chopped)
1 Tablespoon Onion (finely chopped)

Method:
Gently sauté the above ingredients together over a low heat for 3 minutes, stirring well.

Place your favourite fish or chicken on a bed of rice.
Garnish your dish with the Simple Salsa.

*Sit back and enjoy the complements


  'SIMPLE MUFFINS'...

'SIMPLE' MUFFINS...

Ingredients:

3 cups plain flour
2 teaspoons bi carb soda
2 cups water
2/3 cup oil (include the Simply Green Tomatoes oil)
Blend above ingredients together and spoon into muffin tins.
Mix topping together:-250g Philadelphia cheese, 1 tablespoon roughly chopped Simply Green Tomatoes and one egg. Spoon topping over muffin mix and bake in moderate oven approx 20 minutes
depending on the size of the muffin.
Serve while warm. Delicious.
